Grain-free, Gluten-free, Dairy-free, Sugar-free

Ingredients:
1/4 cup coconut flour
3/4 cup almond flour
1/4 teaspoon sea salt
1 teaspoon cinnamon
1/4 teaspoon baking powder
3 small free-range eggs
250g grated carrots
10 crushed macadamia nuts
Juice of 1/2 an orange
Grated zest of an orange
1/4 cup melted coconut oil
Optional: Monkfruit extract or stevia (for additional sweetness)

Instructions:
Add all ingredients to a food processor and slowly add in melted coconut oil and eggs while blending.
Add to a greased non-toxic loaf ‘tin’ (glass or ceramic).
Approximately 1 hour in the oven at 160 degrees C.
Prod with a toothpick, if it comes out clean, your bread is ready.
Let stand until cooled.
